Built over the site of the 19th century Alston Street, the restaurant has a quirky decor that features tiled vaults, huge mirrors and lights made with decanters. Part of Hilton Glasgow Grosvenor, beGin opened on Byres Road towards the end of 2017. Staffed by hip mixologists, it is an on trend mix of exposed copper piping, filament bulbs and lots of gin. In fact, the bar stocks some 100 varieties of gin from all over the world and they are available as both classic and new cocktails or as a Perfect Serve – a double measure served with one of twelve mixers and 28 garnishes. Of course, craft beers and cocktails are also available.

Serving classic French dishes, the Bistro at Hotel du Vin is tucked away off Bristo Place in Edinburgh’s atmospheric Old Town. It is a cosy, welcoming space with restored fireplaces, reclaimed floorboards and lots of wine merchant memorabilia.

Service is polished but informal and the sommelier is always happy to advise anyone in need of a little friendly guidance around the 200 plus bin list. The Bistro’s courtyard – complete with cigar bothy and heaters – is a hidden gem which is well worth seeking out in the sunnier months.
